Break the green-colored mold this St. Patrick’s Day with these eye-catching Pot of Gold Jell-O Coins. So fun and so easy to make, all you need is pineapple-flavored Jell-O and a cookie cutter—then simply kick back and count all the compliments.

What You’ll Need

Island Pineapple-flavored Jell-O
Unflavored gelatin powder (sold at grocery stores)
Large glass baking dish
Cookie cutter
Vegetable oil spray

Let’s Get Cooking

Prepare the Jell-O per the instructions and pour into a large baking dish to create a 1” thick layer. (To make the Jell-O stiffer and more moldable, you might want to add a few pinches of gelatin powder.) After the Jell-O has set, use the cookie cutter to punch out the coins. If the cookie cutter starts sticking, hit it with some spray-on vegetable oil and then wipe away any excess oil.

Did Ya Know?

Back in the 1960s, Jell-O responded to the popularity of gelatinous salads by rolling out a short-lived line of vegetable-based flavors, including Celery, Italian and Seasoned Tomato.

Did Ya Know?

Like other now-generic brand names such as Kleenex® and Band-Aid®, Kraft Foods’ Jell-O brand has become synonymous with any gelatin dessert.

Cheryl’s Take:

“To really make this dish shine, serve in double-handled soup bowl. I found these at Crate & Barrel, but this is also the perfect excuse to dust off grandma’s formal china. Your guests will love the formality of the serving ware contrasted with this super-silly food.”
